Carob Tree (Ceratonia siliqua)The carob tree (Ceratonia siliqua) is found in the Mediterranean and the Near East. It grows between 30 and 60 feet tall. The fruit of the carob tree has a huge economic impact. It can be eaten, as is done in the rural areas where it’s native, and is also used as a chocolate substitute in the United States. Even more important is the seed from which locust bean gum is produced. Locust bean gum is used as a thickening agents and a food additive known as E410, even in organic products.
The wood is reddish with a light sapwood, is dimensionally very stable, and resistant to rotting. It is hard, dense, and heavy. It is particularly suitable for the production of fences, parquet floors, and doors. It is also very resistant to breakage and is therefore frequently used for tool handles and walking sticks. Its durability also makes it a great candidate for use as slow-burning charcoal.
